QimiQ Marinade Base
What can it do?
The worldwide patented liquid marinade is 100 % phosphate-, starch- and lactose-free. It ensures less roasting loss, a more tender end product and a longer shelf life.
What is it good for?
It is the ideal solution for
- Marinating meat (beef, pork, lamb and game), fish and seafood
- and for tumbling meat (beef, pork, lamb and game).
What's in it?
Lactose-free milk (3.5 % fat), water, mixed fruit juice concentrate (pear, yellow mirabelle, quince), antioxidant rosemary extract, beef gelatine.

Basic recipe water marinade
Blend 9 litres of water with 1 litre of marinade and 200 - 350 g of salt
with a hand blender.
Pickle the fish and process it afterwards.
Pickle or tumble the meat and then process.
Basic recipe oil marinade
Mix 1 part of the marinade with 2 parts oil (any, not butter or
lard) and approx. 5 % salt. You can also use fresh herbs and
spices can be added.
Marinate the fish for 1 - 2 hours and then fry it.
Marinate the meat for 2 - 5 days in a vacuum bag and store
refrigerated.
Insertion times
- Marinate cut pieces of meat (e.g. sliced meat, ragout) for 2 - 5 hours.
- Marinate small pieces of meat (e.g. chicken breast, duck breast) for approx. 2 - 5 hours.
- Marinate large pieces of meat for at least 12 hours.
- Marinate seafood (with or without shell) for approx. 2 hours.
- Marinate the fish for 2 - 3 hours, depending on the size.
